Chicken Breast In Mustard Sauce Recipe

Ingredients
  • Little grated ginger and fresh thyme
  • 50 g Butter
  • 3 Onions; peeled & finely sliced
  • 1/2 tb Tomato puree
  • 3 Cloves garlic; peeled and finely sliced
  • 1/2 tb Turmeric
  • Salt & pepper
  • 1 l Chicken stock
  • 1/2 tb Vegetable oil
  • 2 Red chillies; sliced
  • 2 tb Natural yoghurt
  • 4 Chicken breasts; skin on Spice uped in Caribbean Light spices
  • 2 sl Hot pepper
  • 4 Tomatoes; sliced
  • 400F g Green banana ratatouille;

Directions
  • Step #1 Sweat the onions in a little oil & butter until soft.
  • Step #2 Add the garlic & sweat for a further min.
  • Step #3 Add tomato puree, chillies, hot pepper & chilli powder.
  • Step #4 Sweat for 2 mins & add the chicken stock, tomatoes & natural yoghurt.
  • Step #5 Fry the chicken breast in the remaining oil & butter until lightly coloured.
  • Step #6 Add to the sauce in the oven for approximately 10 mins until just done.
  • Step #7 Remove the chicken & reduce the sauce until thick.
  • Step #8 Place the ratatouille stew in the middle of the plate.
  • Step #9 Cut the chicken breast into 3 & arrange on top.
  • Step #10 Adjust Spice uping of the sauce if necessary & pour on top of it.
