Chicken Breast Stuffed With Olives And Goat Cheese Recipe

Ingredients
  • 1/2 ts Garlic powder
  • 1/2 Red bell pepper; julienned
  • Salt & freshly ground black pepper
  • 1 Garlic clove; minced
  • 1/4 ts White pepper
  • 1 pn Salt
  • 1/4 c Dry sherry
  • 3 c Thinly sliced mushrooms
  • 1 tb Minced fresh parsley
  • 6 oz Gorgonzola cheese; crumbled
  • 4 Chicken breast halves; skin removed
  • 1 tb Butter

Directions
  • Step #1 Place the chicken breasts on a flat surface and, on each, cut a "pocket" into one edge at the thickest part.
  • Step #2 Spice up breasts with pepper, garlic powder & salt, & set aside.
  • Step #3 In a large skillet over medium-high heat, heat butter & saute mushrooms & garlic for two mins.
  • Step #4 Add sherry & saute for two extra mins.
  • Step #5 Remove from heat & let cool.
  • Step #6 Drain mushrooms & garlic, then mix with gorgonzola cheese, salt & pepper in a medium bowl.
  • Step #7 For each chicken breast, open pocket & stuff with enough mushroom-cheese mixture to evenly fill pocket, about 1/2-inch thick.
  • Step #8 Place slices of red bell pepper in pocket.
  • Step #9 Fold sides of breast downward & place, "seam" side down, in a baking dish.
  • Step #10 Place rolled breasts in a 400F degree oven for 20 to 25 mins, or until cheese begins to run.
  • Step #11 To serve, arrange any leftover stuffing on plate, slice breast in half and place over leftover stuffing.
  • Step #12 serve this with rice & vegetables.
