Ingredients
Salt & freshly ground pepper
6 lg Red bell pepper; stems, ribs and seeds removed
3 tb Unsalted butter; cut into 6 pieces
3 Garlic clove; sliced thinly
1/4 c Olive oil; divided
6 lg Boneless skinless chicken breast halves; thinly lbed
1 1/2 tb Fresh tarragon; finely sliced
1/2 c Chicken stock or white wine
Directions
Step #1 preheat your trusty oven to 375 F.
Step #2 Hollow out peppers, removing seeds & white ribs.
Step #3 Brush the inside & outside of the peppers with 2 tbsps of the olive oil and Spice up this with salt & pepper.
Step #4 Brush the chicken breasts with the remaining 2 tbsps of oil and Sprinkle top with the garlic & tarragon.
Step #5 Thinly lb each breast, roll up breast & place one in each pepper.
Step #6 Place one piece of butter in each pepper.
Step #7 Place the peppers on their sides in a baking dish so they fit snugly.
Step #8 Pour the stock or wine over the peppers, cover with foil & bake for 15 mins, basting with pan juices, every once in awhile.
Step #9 Remove foil & continue baking for 10 mins.
