4 Skinless; boneless chicken breast halves, each about 4 to 6 oz
1 c Crumbled Gorgonzola or blue cheese;
1/4 c sliced fresh parsley
1/2 c Grated fresh Parmesan cheese;
1 1/2 c Heavy cream
Salt & freshly ground black pepper
12 oz Rigatoni pasta; preferably multi-colored
Directions
Step #1 TO MARINATE THE CHICKEN: Lightly lb each chicken breast between 2 pieces of plastic wrap.
Step #2 In a glass or porcelain dish, mix the lemon juice, 1 tbsp of the oil & 1 tsp of the garlic and Spice up this with salt & pepper to taste.
Step #3 Marinate the chicken in this mixture, in the refrigerator, covered, for not more than 2 hrs.
Step #4 TO MAKE THE SAUCE: In a 2-quart saucepan over med-heat/flame, heat 1 tbsp of olive oil.
Step #5 Add the onion & remaining tsp of garlic & cook stirring, over low heat/flame, for 5 mins or until the onion is tender.
Step #6 Add the cream & bring to a boil, add the sage and parsley & remove this from the heat.
Step #7 Set aside until later.
Step #8 TO MAKE THE PASTA & COOK THE CHICKEN: In a stock pot, bring 3 quarts of salted water to a boil & cook the pasta for about 12 mins or according to directions on the box.
Step #9 Meanwhile remove the chicken from the marinade & pat dry.
Step #10 Dip the chicken lightly in the Spice uped flour on both sides.
Step #11 In a 12-inch skillet over med-heat/flame, heat the remaining 2 tbsps of olive oil & cook the chicken for about 5 mins per side or until completely cooked through.
Step #12 Remove the chicken to a plate & loosely cover with foil, keep warm.
Step #13 Add the white wine to the skillet & boil, stirring with a wooden spoon until there are only 2 tbsps of liquid in the pan.
Step #14 Add the reserved cream mixture & bring to a boil, add the Gorgonzola & Parmesan cheeses & bring to a simmer.
Step #15 remove this from heat and Spice up to taste with salt & pepper.
Step #16 TO ASSEMBLE THE DISH: Drain the pasta & return it to the cooking pan, add the sauce & toss until well mixd.
Step #17 Divide the pasta between 4 dishes & top each portion with chicken.
Step #18 Garnish the chicken with minced parsley & serve as soon as possible.
