2 Whole Boneless chicken breasts with skin; halved
1/2 c Minced onion
1/4 c Finely-sliced toasted walnuts
1 c Crumbled goat cheese
2 ts Minced fresh thyme
2 ts Minced garlic
Directions
Step #1 preheat your trusty oven to 350 degrees.
Step #2 In a skillet, cook the onion in 1 tbsp of oil over moderate heat, until softened.
Step #3 Add garlic and cook, stirring, 1 min.
Step #4 Transfer mixture to a bowl & let cool.
Step #5 stir in the walnuts, & salt & pepper to taste, goat cheese, tomatoes, herbs, stirring until mixd.
Step #6 With your fingers make a pocket for the filling in each chicken breast half by separating the skin from the meat, being careful not to tear the skin & keeping the skin attached along most of the edge.
Step #7 Stuff each pocket with one-fourth of the filling with a small spoon, packing it & pulling the skin to cover the filling completely.
Step #8 In the cleaned skillet heat remaining 1 tbsp oil over moderately-high heat until hot but not smoking & brown chicken, skin-sides down.
Step #9 Leaving chicken skins down, transfer skillet to oven & bake this until just cooked through, about 12 mins.
