Chicken Breasts With Avocado, Grapefruit, And Herbs Recipe

Ingredients
  • 2/3 c Chicken broth
  • 3 Golden Delicious apples; peeled
  • Salt
  • 1/2 c Minced shallot
  • 1 1/2 ts Minced fresh tarragon
  • 6 Chicken breasts; boned
  • 1/3 c Calvados; see Note
  • 1/2 c Unsalted butter - ; softened, divided
  • 1 c Heavy cream
  • 2 tb Olive oil
  • 2 tb Minced fresh chives
  • 2 tb Minced fresh parsley
  • 1/4 c Clarified butter;
  • Ground black pepper

Directions
  • Step #1 Note: Calvados is very difficult to find in the St.
  • Step #2 Louis area, but it is available at Kopperman's Specialty Foods & Delicatessen, a shop in the Central West End.
  • Step #3 The brandy, however, is pricey; you may want to settle for apple schnapps.
  • Step #4 preheat your trusty oven to 400F degrees.
  • Step #5 Spice up chicken to taste with salt and pepper.
  • Step #6 Saute in oil in a large ovenproof skillet over medium-high heat for 2 to 3 mins on each side.
  • Step #7 Pour off fat; add 2 tbsps butter.
  • Step #8 Transfer skillet to oven & bake, basting frequently, for 5 to 7 mins or until crisp & spongy to the touch.
  • Step #9 Place chicken on a plate & keep warm.
  • Step #10 Reserve skillet & fat.
  • Step #11 Halve apples lengthwise; cut crosswise into thick slices.
  • Step #12 Cook apple in clarified butter in another skillet, turning frequently, over med-heat/flame for 8 to 10 mins or until golden.
  • Step #13 Keep warm.
  • Step #14 In skillet used to cook chicken, pour off all but 1 tbsp fat.
  • Step #15 Add shallot; cook this until softened.
  • Step #16 Add Calvados to skillet; cook, scrapping up browned bits, until liquid is reduced to 2 tbsps.
  • Step #17 Add broth; cook this until liquid is reduced to 1/3 c.
  • Step #18 stir in the cream; cook, stirring frequently, until thickened.
  • Step #19 remove this from heat.
  • Step #20 Cut remaining 6 tbsps butter into small pieces.
  • Step #21 Stir butter, parsley, chives & tarragon into sauce.
  • Step #22 Spice up this with salt & pepper.
  • Step #23 Place skillet in a pan of hot water to keep sauce warm.
  • Step #24 Cut chicken diagonally into 1/4-inch slices.
  • Step #25 Spread sauce on a serving platter.
  • Step #26 Arrange chicken & apple slices alternately on platter.
  • Step #27 Yields 6 servings.
  • Step #28 Tester's note: Good entree with a very rich sauce.
  • Step #29 For family members who preferred less fat, we also made a sauce of leftover broth mixed with herbs.
