Chicken Chili Recipe

Ingredients
  • 1 kg Chicken thigh fillet; skinned
  • 2 ts Paprika
  • 1 ts Cayenne pepper
  • 3 lg Cloves garlic
  • 2 tb Finely sliced coriander leaves
  • 2 tb Finely sliced parsley leaves
  • 1 lg Spanish onion finely sliced
  • 2 ts Ground coriander
  • 3 tb Olive oil
  • 2 ts Ground cummin
  • 1 ts Turmeric
  • 2 ts Grated lemon rind

Directions
  • Step #1 In a frying pan, carefully fry onion & garlic.
  • Step #2 Do not allow garlic to burn.
  • Step #3 When onion is translucent, add all the spices.
  • Step #4 Cook for three or four mins over med-heat/flame, stirring constantly.
  • Step #5 remove this from heat.
  • Step #6 stir in the lemon rind, coriander & parsley.
  • Step #7 allow this to cool stir in the chicken pieces, mix well.
  • Step #8 put in the fridge at least 3 hrs or overnight.
  • Step #9 Fry in a non-stick pan or cook on the barbecue.
