Chicken Chow Mein With Chinese Prawn Toasts Recipe

Ingredients
  • 1 md Onion; sliced
  • 3 tb Soy sauce
  • 2 c Celery; sliced diagonally
  • 1/2 lb Egg noodles
  • 1 c Fresh bean sprouts; or 1 1/2 c Shredded celery cabbage
  • 1 1/2 c Skinless boneless chicken breast; shredded
  • 1 tb Oil
  • Salt
  • 1/2 c Waterchestnuts; sliced
  • 1 1/4 c Fresh mushrooms; or 3/4 c Canned mushrooms
  • 1/2 c Bamboo shoots; sliced
  • Pepper

Directions
  • Step #1 1.
  • Step #2 Prepare & slice all ingredients.
  • Step #3 Cook noodles in salted boiling water.
  • Step #4 Drain in colander, run cold water over noodles to remove excessive starch from them.
  • Step #5 Reserve.
  • Step #6 2.
  • Step #7 Place oil in wok, heat to smoking point.
  • Step #8 Add chicken & onions, salt to it & stir fry 3 mins, then add celery, cover wok, stir fry briefly, celery cabbage or bean sprouts, cook ingredients 2 mins.
  • Step #9 Lift cover off wok, mushrooms, & cook for 3 mins longer, add water chestnuts, bamboo shoots, soya sauce, with wok cover.
  • Step #10 Lift cover of wok 2 or 3 times to stir in thegredients so that everything can be cooked through.
  • Step #11 When ingredients are cooked, more salt, add pepper, if desired.
  • Step #12 Mix drained noodles in, stir everything up thoroughly.
  • Step #13 NOTE: Use egg noodles only.
  • Step #14 Macaroni does not contain egg & will break up when stirred as for chow mein.
  • Step #15 Shrimps or pork could be substituted for the meat above or for super deluxe chow mein, a 1/2 of each meat may be used.
