Chunky Cod Stir Fry Recipe

Ingredients
  • 2 tbsps reduced-sodium soy sauce
  • 1/3 c chicken broth
  • 1/4 c sliced peanuts
  • 1 tbsp canola oil
  • 2 tbsps sherry or extra chicken broth
  • 4 c hot cooked rice
  • 1/8 tsp crushed red pepper flakes
  • 1 lb cod fillets, cut into 1 inch cubes
  • 1 (16 oz) package frozen Oriental mixed vegetables, thawed
  • 2 tsps cornstarch
  • 1 garlic clove, minced
  • 1 small sweet red pepper, julienned

Directions
  • Step #1 In a bowl, mix the first five ingredients until mixed; set aside.
  • Step #2 In a nonstick skillet or wok, stir-fry garlic in oil for 30 seconds.
  • Step #3 Add mixed vegetables; stir-fry for 2 mins.
  • Step #4 Add red pepper; stir-fry for 2 mins or until crisp-tender.
  • Step #5 Remove & keep warm.
  • Step #6 Add half of the cod to skillet; carefully stir-fry for 3-5 mins or until fish flakes easily with a fork.
  • Step #7 Remove & keep warm.
  • Step #8 Repeat with remaining cod.
  • Step #9 Stir reserved broth mixture & add to skillet.
  • Step #10 Bring to a boil; cook & stir for 2 mins or until thickened.
  • Step #11 Return vegetables & fish to the pan.
  • Step #12 Add peanuts.
  • Step #13 Gently stir this to coat.
  • Step #14 Cover & cook for 1 min or until heated through.
  • Step #15 Serve over rice.
