Chicken Cutlet Parmesan Recipe

Ingredients
  • 2 c Plain lowfat yogurt OR plain nonfat yogurt
  • 1/2 ts Ground cardamom
  • 1/4 c Apricot preserves
  • 1 tb Olive oil
  • 1/2 c Golden raisins
  • 3/4 ts Ground cumin
  • 1 1/2 ts Ground coriander
  • 2 tb Cornstarch; [or substitute]
  • Salt
  • 1 ts Ground ginger
  • Pepper
  • 1 md Onion; sliced
  • 1/8 ts Cayenne pepper; or more to taste
  • 2 Garlic cloves; minced
  • 1/2 lb Chicken breast; no skin, no bone, R-T-C, halved and cubed

Directions
  • Step #1 1.
  • Step #2 In a large skillet, saute garlic & onions in oil until golden.
  • Step #3 Add chicken & saute until browned.
  • Step #4 Add 1/4 c water, raisins, cayenne, cumin, coriander, ginger, cardamom, & apricot preserves.
  • Step #5 2.
  • Step #6 Simmer uncovered for 15 to 20 mins, stirring every once in awhile until chicken is cooked.
  • Step #7 The liquid will be mostly absorbed.
  • Step #8 3.
  • Step #9 slowly stir yogurt into cornstarch [or substitute] until dissolved.
  • Step #10 Stir mixture into skillet.
  • Step #11 4.
  • Step #12 Simmer carefully, stirring constantly, until sauce thickens & no taste of starch remains.
  • Step #13 Do not boil.
  • Step #14 Spice up this with salt & pepper.
  • Step #15 Serves 4.
