Chicken Fillets With Chestnut And Mushroom Stuffing Recipe

Ingredients
  • 1 cn Tomato Sauce
  • 1 tb Olive Oil
  • 1/2 c Cheddar Cheese; shredded,
  • 1 Jar; Pimientos, drained
  • 1 lb Boneless; skinless Chicken Breasts, cut into cubes
  • Cooked Rice for four
  • 1 cn sliced Green Chilies
  • 1 cn Corn; drained
  • 2 ts Chili Powder
  • 1 ts Onion Powder

Directions
  • Step #1 Warm the olive oil in a heavy skillet over med-heat/flame.
  • Step #2 Cook the chicken cubes in the warm oil until cooked through, about 8 to 12 mins.
  • Step #3 Add the corn, green chilies, tomato sauce, pimiento, chili powder, and onion powder to the skillet.
  • Step #4 Bring the mixture to a boil, stirring every once in awhile.
  • Step #5 Reduce the heat, cover, & let simmer for about 15 mins.
  • Step #6 Meanwhile, prepare the rice as directed on the manufacturer's packaging.
  • Step #7 To serve, ladle a hearty portion of the chicken fiesta over a bed of rice.
  • Step #8 top this with a sprinkling of cheddar cheese & serve warm.
