Chicken In Walnut Sauce Recipe

Ingredients
  • Salt & freshly ground black pepper
  • 1 lg Onion; finely sliced
  • 2 tb Freshly sliced parsley
  • 1 tb Oil
  • 2 tb White wine vinegar
  • 2 tb Soy sauce
  • 2 tb Soft brown sugar
  • 4 Skinless chicken breast fillets
  • 1 Clove garlic; crushed
  • 250 g Pineapple flesh cut into cubes;
  • 1 230 gram can sliced tomatoes;
  • 25 g Butter;

Directions
  • Step #1 1.
  • Step #2 Melt the butter & oil in a large pan & fry the chicken breasts for 5-6 mins, turning every once in awhile.
  • Step #3 2.
  • Step #4 Add the onion & garlic & cook for a further 2-3 mins until golden.
  • Step #5 3.
  • Step #6 Add the tomatoes, vinegar, pineapple, soy sauce, sugar and Spice uping to taste.
  • Step #7 4.
  • Step #8 Bring to the boil then reduce the heat, cover & let simmer carefully for 15-20 mins.
  • Step #9 5.
  • Step #10 Transfer to a warmed serving plate & Sprinkle top with freshly sliced parsley.
