Chicken Liver Terrine Recipe

Ingredients
  • 175 g Chicken livers; thawed if frozen
  • 1 tb Plain flour
  • 40 g Butter;
  • 4 tb Dry sherry
  • Salt & pepper
  • 7 Eggs; beaten

Directions
  • Step #1 Preheat the oven to Gas Mark 4/180 C/350 F.
  • Step #2 Trim, wash & dry the chicken livers & brown them carefully, then chop them very coarsely.
  • Step #3 Heat 25g (1oz) butter in a frying-pan until foaming, then toss in the chicken livers & brown them carefully all over.
  • Step #4 stir in the the flour & cook for 2 mins, stirring constantly.
  • Step #5 Spice up this with salt & pepper & pour over the sherry.
  • Step #6 Boil off the alcohol for about 2 mins then remove this from the heat.
  • Step #7 Spice up the eggs with salt & pepper & grease a shallow 18-20cm (7-8inch) ovenproof dish with the remaining butter.
  • Step #8 Pour the livers into the eggs & mix together, then pour this into the prepared dish.
  • Step #9 Cook in the oven for about 15 mins or until the mixture has just set.
