Chicken Livers On Spinach Salad With Gorgonzola Dressing Recipe

Ingredients
  • 1 15 grams pac fresh sage; finely sliced
  • 1 250 gram blo polenta; cut into 8 slices, 1cm thick
  • 1 250 gram pac frozen chicken livers; defrosted
  • 2 Cloves garlic; finely sliced
  • 5 tb Olive oil
  • 1 Green pepper; deseeded and cut into 10 large pieces
  • 1 Red pepper; deseeded & cut into 10 large pieces

Directions
  • Step #1 Heat 3 tbsps of the oil in a large ridged griddle pan until very hot, sear both sides of the polenta for 1 min each then turn the heat down slightly & continue to cook for 5 mins on each side.
  • Step #2 Heat the remaining oil in a large frying pan & cook the red and green peppers until softened.
  • Step #3 Remove them from the pan & keep warm.
  • Step #4 Add the chicken livers & cook for 5-7 mins or until cooked through, adding the garlic & sage for the last min.
  • Step #5 Remove the chicken livers from the pan & arrange with the peppers, garlic & sage on top of the polenta.
