Ingredients
  • 1/3 c Marsala wine
  • Salt & pepper
  • 3 tb Flour
  • 1/3 c Nonfat chicken broth
  • 2 Skinless boneless chicken breast halves
  • Nonstick vegetable spray
  • 4 oz Shiitake mushrooms; sliced
  • 2 Scallions; sliced

Directions
  • Step #1 Place each breast between two pieces of waxed paper & lb until 1/4-inch thick.
  • Step #2 mix flour & salt & pepper, lightly press each breast into flour to coat both sides.
  • Step #3 Saute mushrooms & scallions in skillet treated with nonstick spray.
  • Step #4 cook this until soft.
  • Step #5 Transfer to bowl & set aside.
  • Step #6 Brown chicken in skillet over medium-high heat.
  • Step #7 Return the mushroom mixture to pan.
  • Step #8 Carefully add wine & broth.
  • Step #9 Cook, uncovered for 3 mins or until sauce thickens slightly.
  • Step #10 Serve chicken topped with mushroom sauce.
