Chicken Pockets With Goat's Cheese, Poblanos, And Andouil Recipe

Ingredients
  • 1 Garlic clove; crushed
  • 1 pk MAGGI Spicy Italian Tomato Sauce Mix
  • 500 g Boneless chicken; cut into thin strips
  • Toppings: grated cheese; sliced tomato, avocado wedges, sour cream
  • 1 tb Oil
  • 1 Red pepper; cut into chunks
  • 1/4 ts Cayenne pepper
  • 4 lg Pita bread; cut in half and warmed
  • 1 Red onion; cut into thin wedges
  • 1 c Water
  • 1 ts Ground cumin

Directions
  • Step #1 Heat the oil in a large frying pan.
  • Step #2 Add the chicken & brown over a moderately high heat.
  • Step #3 Add the garlic, cayenne pepper, cumin, red pepper & onion to the pan & cook for 2-3 mins.
  • Step #4 mix the sauce mix & water.
  • Step #5 Add to the pan.
  • Step #6 Bring to the boil, stirring, then simmer for 4-6 mins or until the chicken is cooked.
  • Step #7 Stir every once in awhile.
  • Step #8 Place the chicken mixture in the warmed pita bread halves & serve with a selection of toppings.
