Chicken Rice One-pot Recipe

Ingredients
  • 2 tb Butter or margarine
  • 7 c Cooked chicken; shredded
  • 1/3 c Green onion; sliced
  • extra picante sauce & cheddar
  • 1 c Long grain rice; uncooked
  • 2 1/2 c Chicken broth; divided
  • 12 10" flour tortilla; warmed
  • Cheese
  • 1 tb Chili powder
  • 1 Clove garlic; minced
  • 16 oz Picante sauce; divided
  • 3 c Shredded cheddar cheese; divided
  • 1/2 c Ripe olives; sliced

Directions
  • Step #1 In a skillet, saut onions & garlic in butter until tender.
  • Step #2 stir in the chicken, chili powder, 1/4 c broth & 3/4 c of picante sauce.
  • Step #3 Heat through; set aside.
  • Step #4 In a medium saucepan, bring rice and remaining broth to a boil.
  • Step #5 Reduce heat; cover & let simmer 20 min.
  • Step #6 Stir in remaining picante sauce; cover & let simmer 5-10 mins or until rice is tender.
  • Step #7 stir in theto chicken mixture.
  • Step #8 add olives & 2 c cheese.
  • Step #9 Spoon 1 c filing, off center, on each tortilla.
  • Step #10 Fold sides & ends over filling, then roll up.
  • Step #11 Arrange in two ungreased 13x9x2" pans.
  • Step #12 Sprinkle top with remaining cheese.
  • Step #13 Cover & bake this at 375 degrees for 10-15 mins or until heated through.
  • Step #14 Garnish with picante sauce & cheese.
