Chicken Salad For Sandwiches Recipe

Ingredients
  • 2 cn Pineapple tibits drained
  • 8 c Grapes, green seedless; halved
  • 8 c Celery; sliced
  • 9 c Macaroni, mini shells; cooked
  • 9 c Chicken; cooked, sliced
  • 18 x Eggs; hard-cooked; sliced

Directions
  • Step #1 --DRESSING----- 1 qt Mayonnaise 2 c Cream, sour; (16 oz.
  • Step #2 ) 2 c Whipped topping 1/4 c Juice, lemon 1/4 c Sugar 1 1/2 ts ;salt 2 c Cashews; broken pieces In a large bowl, mix the first six ingredients.
  • Step #3 mix the first six dressing ingredients & whisk until smooth.
  • Step #4 Pour over salad; toss to coat.
  • Step #5 Chill at least 1 hr.
  • Step #6 Fold in cashews just before serving.
