Ingredients
2 tb Butter
1 pn Freshly ground nutmeg
Salt; to taste
9 c Chicken stock
1 c All-purpose flour
1/2 ts Thyme
Freshly ground white pepper; to taste
2 md Eggs
1 sm Onion; minced
Directions
Step #1 Recipe by: Food & Wine In a large saucepan, melt the butter.
Step #2 Add the onion & cook over moderate heat until softened, about 3 mins.
Step #3 stir in the 8 c of the chicken stock & bring to a simmer.
Step #4 Spice up with salt & white pepper to taste.
Step #5 Meanwhile, nutmeg, mix the remaining 1 c stock with the thyme, in a medium saucepan, 1/2 tsp salt & a pinch of white pepper.
Step #6 Bring to a boil over high heat.
Step #7 remove this from the heat & beat in the flour until thoroughly mixed.
Step #8 Let the mixture cool slightly, then beat in the eggs, one at a time.
Step #9 Drop tbsps of the dumpling mixture into the simmering soup and cook this until the dumplings begin to firm, about 5 mins.
Step #10 remove this from the heat, cover the saucepan & set aside to steam the dumplings for 3 mins before serving.
