Ingredients
  • 2 tb Soy sauce
  • 8 oz Pineapple chunks in juice; drained, juice reserved
  • 1 md Red bell pepper; in 1 " chunks
  • 1/2 ts Red pepper sauce
  • 1 tb Ginger root; finely sliced
  • 4 md Carrots; in 1" chunks
  • 1 tb Packed brown sugar
  • 1/2 c Chicken broth
  • 1 lb Boneless skinless chicken breast halves; in 1 1/2" cubes
  • 1/2 ts Ground allspice
  • 1 tb Cornstarch

Directions
  • Step #1 Mix chicken, gingerroot, carrots, broth, soy sauce, brown sugar, allspice & pepper sauce in 3 1/2-4 quart Crock Pot slow cooker.
  • Step #2 Cover & cook on Low heat setting 7-8 hrs or until vegetables are tender & chicken is no longer pink in center.
  • Step #3 Mix cornstarch & reserved pineapple juice; slowly stir in theto chicken mixture.
  • Step #4 stir in the pineapple & bell pepper.
  • Step #5 Cover & cook on High heat setting about 15m inutes longer or until slightly thickened & bubbly.
  • Step #6 1 tsp.
  • Step #7 ground ginger may be substituted for fresh gingerroot.
  • Step #8 Serves 4.
