Chicken Thighs With Pistachios And Escargot Butter Recipe

Ingredients
  • 8 Chicken thighs
  • 2 c Plain yogurt
  • Freshly-ground black pepper; to taste
  • Sumac or zartar; see Note
  • Salt; to taste
  • 2 md Yellow onions; peeled and sliced
  • === GARNISH ===
  • 1 tb sliced parsley
  • 2 Garlic cloves; peeled and crushed
  • 3 tb Olive oil

Directions
  • Step #1 Note: May be found in Middle Eastern markets.
  • Step #2 Heat a large frying pan & add 2 tbsps of the oil.
  • Step #3 Add the garlic & onion & saute until the onion is tender.
  • Step #4 Do not brown.
  • Step #5 Spice up the chicken with salt & pepper to taste.
  • Step #6 Heat another frying pan & add the remaining 1 tbsp of oil.
  • Step #7 Brown the chicken on both sides & remove to a 13-by-9-inch glass baking dish.
  • Step #8 When the onions are tender stir in the the yogurt & parsley off the heat.
  • Step #9 Salt & pepper to taste.
  • Step #10 Pour the mixture over the chicken thighs and bake this at 375 degrees for 35 mins.
  • Step #11 Garnish with sumac or zartar.
  • Step #12 Comments: While this dish is terribly easy & quick to prepare, it has enough depth of flavor for a fine dinner party.
