Chicken Tikka Pittas With Tzatziki Recipe

Ingredients
  • 1/2 ts Garam masala
  • 4 Floz liquid made up of reserved cooking juice & warm water
  • 8 oz Finely sliced onions
  • 3 oz Ghee or unsalted butter
  • A pinch of tandoori colouring;
  • 1 ts Ground cumin
  • 1/2 ts Chilli powder
  • 1 tb Lemon juice
  • 1 ts Ground coriander
  • 1 ts Crushed garlic
  • 1 ts Finely grated root ginger
  • 1 1/2 oz Ground almond
  • 10 Floz single cream
  • 1/2 ts Salt or to taste

Directions
  • Step #1 Melt the ghee or butter over med-heat/flame & fry the onions until they are soft but not brown.
  • Step #2 Add the cumin, coriander, garam masala & chilli powder & fry for 1 min.
  • Step #3 Add the ginger & garlic and cook for 1-2 mins.
  • Step #4 Add the spiced liquid, cover the pan & let the contents bubble for 2-3 mins.
  • Step #5 stir in the the salt, tandoori colouring & cream.
  • Step #6 Re-cover the pan & let it all bubble carefully for 10 mins.
  • Step #7 Add the cooked tikka & ground almonds.
  • Step #8 Stir & mix well.
  • Step #9 Cover and simmer for 5-6 mins.
  • Step #10 stir in the the lemon juice & remove this from heat.
  • Step #11 serve this with Kesari Chawal.
