Creamy Chicken Tikka
Ingredients
1/2 ts Garam masala
4 Floz liquid made up of reserved cooking juice & warm water
8 oz Finely sliced onions
3 oz Ghee or unsalted butter
A pinch of tandoori colouring;
1 ts Ground cumin
1/2 ts Chilli powder
1 tb Lemon juice
1 ts Ground coriander
1 ts Crushed garlic
1 ts Finely grated root ginger
1 1/2 oz Ground almond
10 Floz single cream
1/2 ts Salt or to taste
Directions
Step #1 Melt the ghee or butter over med-heat/flame & fry the onions until they are soft but not brown.
Step #2 Add the cumin, coriander, garam masala & chilli powder & fry for 1 min.
Step #3 Add the ginger & garlic and cook for 1-2 mins.
Step #4 Add the spiced liquid, cover the pan & let the contents bubble for 2-3 mins.
Step #5 stir in the the salt, tandoori colouring & cream.
Step #6 Re-cover the pan & let it all bubble carefully for 10 mins.
Step #7 Add the cooked tikka & ground almonds.
Step #8 Stir & mix well.
Step #9 Cover and simmer for 5-6 mins.
Step #10 stir in the the lemon juice & remove this from heat.
Step #11 serve this with Kesari Chawal.
