Chicken Tonnato Recipe

Ingredients
  • 4 tb Tikka Curry Paste
  • Freshly ground black pepper
  • 3 Chicken breasts
  • 1 Lemon; Juice of
  • 1 bn Coriander
  • 2 Cloves garlic
  • 115 g Baby spinach leaves;
  • 1 tb Oil
  • 140 g Greek Yogurt;
  • 225 g French Beans;
  • Piita breads to serve

Directions
  • Step #1 Place the chicken strips in a large bowl & Sprinkle top with the lemon juice.
  • Step #2 Spoon in the tikka paste & garlic & toss together.
  • Step #3 (If time allows, leave to marinade for 30 mins at this stage) Heat a large wok or frying pan.
  • Step #4 Pour in the chicken with its marinade & cook for 5-7 mins.
  • Step #5 Spice up this with freshly ground black pepper.
  • Step #6 Meanwhile blanch the beans in boiling water.
  • Step #7 Heat a wok with a tbsp of oil & toss in the beans, remove this from the heat & toss through the baby spinach leaves.
  • Step #8 To serve, pile the spinach & beans into the centre of a large serving dish.
  • Step #9 top this with the hot chicken & drizzle over a little greek yogurt.
  • Step #10 serve this with warm pitta breads.
