Chicken Vindaloo Recipe

Ingredients
  • 1/4 ts Salt
  • 1 tb Butter
  • 1 tb sliced fresh basil
  • 1 tb Wine vinegar
  • 2 tb sliced rosemary; divided
  • 1 ds Crushed red pepper
  • 2 tb Olive oil; divided
  • 4 Chicken cutlets
  • 1 Strip orange peel;
  • 1 Garlic clove; crushed
  • 1 16 oz tomatoes; undrained
  • 1/2 ts Sugar
  • 1 md Red onion; sliced

Directions
  • Step #1 In medium saucepan, heat 1 tbsp olive oil over med-heat/flame.
  • Step #2 Add red onion, garlic, red pepper & basil.
  • Step #3 cook this until hot.
  • Step #4 Add tomatoes ( breaking up or cutting into small chunks), orange peel & sugar.
  • Step #5 Simmer.
  • Step #6 While simmering, stir in the vinegar, salt & 1 tbsp rosemary.
  • Step #7 While sauce cooks, place chicken between 2 sheets of wax paper.
  • Step #8 lb to 1/4 thickness.
  • Step #9 In large skillet, heat remaining tbsp oil with butter over medium high heat.
  • Step #10 Add chicken.
  • Step #11 Cook until brown on both sides.
  • Step #12 Remove to warm plate.
  • Step #13 Add sauce to skillet.
  • Step #14 Heat.
  • Step #15 Pour over chicken to serve.
  • Step #16 Sprinkle top with remaining rosemary.
  • Step #17 Approximately 20 mins.
