Chicken With Black Bean Sauce Recipe

Ingredients
  • 2 Green bell peppers; seeded, sliced
  • 1 Chicken; cut into 8 pieces
  • 6 lg Garlic cloves; minced
  • 5 Bacon slices; sliced
  • 3/4 c Canned chicken broth
  • 2 tb sliced fresh oregano or 2 tsps dried
  • 1 cn sliced peeled tomatoes with juices;
  • 2 Bay leaves
  • 1 lg Pinch of cayenne pepper
  • 1/4 c Drained capers
  • 2 c Coarsely sliced onions

Directions
  • Step #1 Cook bacon in Dutch oven over medium-high heat until crisp, about 5 mins.
  • Step #2 Using slotted spoon, transfer bacon to bowl.
  • Step #3 Spice up chicken with salt & pepper.
  • Step #4 Working in batches, add chicken to Dutch oven & brown on all sides, about 7 mins.
  • Step #5 Transfer chicken to plate.
  • Step #6 Spoon off 2 tbsps fat from Dutch oven & discard.
  • Step #7 Add peppers & onions to Dutch oven: saute until onions are tender & golden, about 8 mins.
  • Step #8 Add garlic; stir 1 min.
  • Step #9 Add tomatoes with their juices, bay leaves, oregano, broth, cayenne & bacon; bring to boil.
  • Step #10 Return chicken to Dutch oven.
  • Step #11 Reduce heat, cover & let simmer until chicken is cooked through, about 20 mins.
  • Step #12 Add capers.
  • Step #13 Transfer chicken to bowl.
  • Step #14 Boil sauce until slightly thickened, about 8 mins.
  • Step #15 Spice up this with salt & pepper.
  • Step #16 Spoon sauce over chicken.
  • Step #17 Serves 4.
