Chicken With Cashews Recipe

Ingredients
  • 3 tb Olive oil
  • 6 c Boiling chicken stock or canned low-salt broth
  • 12 oz Pitted prunes
  • 1 lb Large carrots; coarsely grated
  • 1 lg Onion; sliced
  • Paprika
  • 1 Chicken; cut into 6 pieces
  • 2 c Long-grain white rice

Directions
  • Step #1 preheat your trusty oven to 350F.
  • Step #2 Spice up chicken with salt & pepper.
  • Step #3 Heat olive oil in heavy large Dutch oven over medium-high heat.
  • Step #4 Working in batches, add chicken to pot & saute until brown, about 8 mins per batch.
  • Step #5 Transfer chicken to bowl.
  • Step #6 Add onion to pot & saute until golden, about 5 mins.
  • Step #7 Remove pot from heat.
  • Step #8 Spread 1/3 of carrots over onion, then 1/3 of rice & 1/3 of prunes.
  • Step #9 Arrange half of chicken atop prunes.
  • Step #10 Spice up this with paprika, salt & pepper.
  • Step #11 Repeat layering with 1/3 each of carrots, rice & prunes.
  • Step #12 top this with remaining chicken; Spice up this with paprika, salt & pepper.
  • Step #13 Layer remaining carrots, rice & prunes over.
  • Step #14 Pour stock over.
  • Step #15 Cover pot & place this in oven.
  • Step #16 bake this until chicken & rice are cooked through, about 1 hr.
  • Step #17 Serves 6.
