Chicken With Peanut Sauce Recipe

Ingredients
  • 125 ml Apple juice;
  • 4 125 g; skinless chicken breast fillets
  • 15 g Butter;
  • 1 tb Freshly sliced basil
  • 300F ml Milk;
  • 1 Onion; sliced
  • 1 Paw paw
  • 1 Chicken stock cube
  • 15 g Cornflour;
  • 1 tb Oil
  • Freshly sliced basil to garnish

Directions
  • Step #1 1.
  • Step #2 Melt butter & oil in a large frying pan, add the onion and chicken & fry over a moderate heat for 5 mins.
  • Step #3 2.
  • Step #4 mix the cornflour with a little of the milk & add to the pan with the remaining milk, stock cube & basil.
  • Step #5 Bring to the boil, add the apple juice, cover & let simmer for 20 mins.
  • Step #6 3.
  • Step #7 Remove the chicken from the pan & keep warm.
  • Step #8 4.
  • Step #9 Peel, deseed & slice the paw paw.
  • Step #10 Reserving 2 slices for garnishing, puree the remainder with the sauce in a mixer or food processor until smooth.
  • Step #11 Add Spice uping & return to the pan and reheat carefully.
  • Step #12 5.
  • Step #13 serve this with the sauce poured over the chicken & garnished with the reserved paw paw slices & sliced basil.
