Chicken With Roasted Pears And Wild Rice Recipe

Ingredients
  • 2 lg Russet potatoes; peeled, cut into 1 1/2-inch chunks
  • 1 Chicken; cut into 8 pieces
  • 2 tb Fresh lemon juice
  • 1 1/2 ts Ground turmeric
  • 3 1/2 c Canned low-salt chicken broth;
  • 1/2 c Raisins
  • 1 lg Lemon; peel & white pith cut away, very thinly sliced
  • 2 tb Olive oil
  • 2 ts Minced garlic

Directions
  • Step #1 Arrange chicken in single layer in large Dutch oven.
  • Step #2 Drizzle oil over.
  • Step #3 Tuck potatoes between chicken pieces.
  • Step #4 Sprinkle top with garlic and turmeric.
  • Step #5 Spice up this with salt & pepper.
  • Step #6 Lay lemon slices over.
  • Step #7 Sprinkle top with raisins.
  • Step #8 Pour over enough broth barely to cover chicken.
  • Step #9 Bring to boil over high heat.
  • Step #10 Cover & boil 10 mins.
  • Step #11 Uncover; reduce heat to medium & let simmer until chicken is just cooked through & potatoes are tender, about 30 mins.
  • Step #12 Transfer chicken & potatoes to platter.
  • Step #13 Tent with foil to keep warm.
  • Step #14 Add lemon juice to Dutch oven.
  • Step #15 Boil cooking liquid until thickened to light sauce consistency & reduced by half, about 7 mins.
  • Step #16 Spice up to taste with salt & pepper.
  • Step #17 Spoon over chicken & serve.
