Ingredients
2/3 c Fruity white wine
4 ts Sesame oil
24 oz Boneless skinless chicken breast
2 ts Lemon juice
3 Egg yolks
1 ts Mustard
1/2 c Sunflower oil
2 c Chicken stock
2 tb Sesame seeds
Directions
Step #1 mix stock & wine in a saucepan.
Step #2 Bring to a boil, then reduce to simmer.
Step #3 Add 2 tsps of sesame oil & mix well.
Step #4 Taste for Spice uping; the stock should be quite salty.
Step #5 Add the chicken breasts, & let simmer slowly for 5 mins.
Step #6 remove this from heat & let the breasts continue to cook in the warm stock.
Step #7 Check frequently; the breasts are ready when they are just past pink on the inside.
Step #8 remove this from stock & cut into broad, thin slices.
Step #9 Let cool.
Step #10 To prepare the mayonnaise, place egg yolks, mustard & lemon juice in the bowl of a food processor.
Step #11 mix quickly.
Step #12 With the motor running, begin adding the sunflower oil drop by drop.
Step #13 After 1/3 of the oil is added, continue adding in a thin stream & add the remaining 2 tsps of sesame oil.
Step #14 Taste for Spice uping.
Step #15 In a bowl, mix the chicken & the mayonnaise.
Step #16 Reserve in the refrigerator until ready to serve.
Step #17 Place 2 tbsps sesame seeds in a small roasting pan.
Step #18 Place under a hot broiler for 2 to 3 mins, or until golden brown.
Step #19 Garnish chicken with sesame seeds.
Step #20 This recipe yields 8 appetizer servings.
