Chicken With Snap Peas And Shiitakes Recipe

Ingredients
  • 2/3 c Fruity white wine
  • 4 ts Sesame oil
  • 24 oz Boneless skinless chicken breast
  • 2 ts Lemon juice
  • 3 Egg yolks
  • 1 ts Mustard
  • 1/2 c Sunflower oil
  • 2 c Chicken stock
  • 2 tb Sesame seeds

Directions
  • Step #1 mix stock & wine in a saucepan.
  • Step #2 Bring to a boil, then reduce to simmer.
  • Step #3 Add 2 tsps of sesame oil & mix well.
  • Step #4 Taste for Spice uping; the stock should be quite salty.
  • Step #5 Add the chicken breasts, & let simmer slowly for 5 mins.
  • Step #6 remove this from heat & let the breasts continue to cook in the warm stock.
  • Step #7 Check frequently; the breasts are ready when they are just past pink on the inside.
  • Step #8 remove this from stock & cut into broad, thin slices.
  • Step #9 Let cool.
  • Step #10 To prepare the mayonnaise, place egg yolks, mustard & lemon juice in the bowl of a food processor.
  • Step #11 mix quickly.
  • Step #12 With the motor running, begin adding the sunflower oil drop by drop.
  • Step #13 After 1/3 of the oil is added, continue adding in a thin stream & add the remaining 2 tsps of sesame oil.
  • Step #14 Taste for Spice uping.
  • Step #15 In a bowl, mix the chicken & the mayonnaise.
  • Step #16 Reserve in the refrigerator until ready to serve.
  • Step #17 Place 2 tbsps sesame seeds in a small roasting pan.
  • Step #18 Place under a hot broiler for 2 to 3 mins, or until golden brown.
  • Step #19 Garnish chicken with sesame seeds.
  • Step #20 This recipe yields 8 appetizer servings.
