Step #1 ---SAUCE------ 1 tb Butter 1 c Sliced button mushrooms 1/2 c Sliced Shiitake mushrooms 1/4 c White wine 1/4 c Chicken stock 1/4 c Heavy cream sliced parsley for garnish Directions: lb the chicken breasts until they are thin cutlets.
Step #2 In a large saut? pan, heat the butter & olive oil.
Step #3 mix the thyme, pepper, basil, salt, & flour in a bowl & dredge each chicken breast.
Step #4 Place the chicken breasts in the pan & brown on both sides.
Step #5 remove this from pan.
Step #6 To the same pan, add the butter & mushrooms and saut? for 2 mins until golden.
Step #7 Return the chicken to the pan and add the white wine & chicken stock.
Step #8 Bring to a simmer & cook for 1 min.
Step #9 Add the heavy cream & cook for 1 min.
Step #10 Serve the chicken & sauce over pasta & garnish with parsley.
