Chicken, Ham And Leek Pasties Recipe

Ingredients
  • Ornamental kale or red leaf lettuce
  • extra minced fresh thyme
  • 3 c Coarsely sliced walnuts;
  • 1/4 c Plus 2 tbsps olive oil
  • 3 lb Green beans; trimmed and halved crosswise
  • Salt
  • Freshly ground pepper
  • 1/4 c Plus 2 tbsps soy sauce
  • 3 tb Minced shallots
  • 18 lg Chicken breast halves;
  • 3 tb Dijon mustard
  • 6 oz Goat cheese; crumbled
  • 1 c Olive oil
  • 2 tb Minced fresh thyme
  • 3 tb Balsamic vinegar or 2 1/2 tbsps red wine vinegar

Directions
  • Step #1 preheat your trusty oven to 450F.
  • Step #2 Arrange chicken breasts in single layer in jelly roll pans or baking pans.
  • Step #3 Brush both sides with soy sauce and olive oil.
  • Step #4 Sprinkle top both sides with pepper.
  • Step #5 Arrange skin side up.
  • Step #6 Roast until just cooked through, about 20 mins.
  • Step #7 Cool slightly.
  • Step #8 Skin & bone chicken; reserve drippings in pans.
  • Step #9 Cut chicken into 1/2-inch-wide strips.
  • Step #10 Return to pans & turn to coat with drippings.
  • Step #11 Cool.
  • Step #12 Transfer chicken meat & drippings to large bowl.
  • Step #13 Set aside.
  • Step #14 Cook beans in large pot of boiling salted water until crisp-tender, about 5 mins.
  • Step #15 Drain.
  • Step #16 Refresh with cold water.
  • Step #17 Drain well.
  • Step #18 (Can be prepared 1 day ahead.
  • Step #19 Cover chicken & beans separately and put in the fridge.
  • Step #20 ) mix mustard & vinegar in medium bowl.
  • Step #21 slowly whisk in oil.
  • Step #22 Add shallots & 2 tbsps thyme.
  • Step #23 (Can be prepared 1 day ahead.
  • Step #24 Store dressing at about room temp.
  • Step #25 ) Add beans, dressing & walnuts to chicken & toss to coat.
  • Step #26 Spice up with salt & pepper.
  • Step #27 Line platter with kale.
  • Step #28 top this with salad.
  • Step #29 Sprinkle top with cheese & extra thyme & serve.
  • Step #30 Serves 20.
