Chicken-vegetable Soup Recipe

Ingredients
  • 1/2 ts Cayenne pepper
  • 1 c Packed grated sharp cheddar cheese;
  • 1 md Onion; sliced
  • 1 cn sliced mild green chilies;
  • 1 1/2 ts Paprika
  • 2 c sliced cooked chicken
  • 8 Yellow or green bell peppers
  • 2 lg Garlic cloves; minced
  • 3/4 c Tomato sauce

Directions
  • Step #1 mix first 8 ingredients in medium bowl.
  • Step #2 Spice up to taste with salt & pepper.
  • Step #3 (Can be prepared 6 hrs ahead.
  • Step #4 Cover & put in the fridge.
  • Step #5 ) preheat your trusty oven to 375F.
  • Step #6 Cut around stem of each bell pepper & remove, creating large opening at top.
  • Step #7 Scoop out seeds.
  • Step #8 Divide filling among peppers (about 1/2 c each).
  • Step #9 Replace tops of peppers.
  • Step #10 Stand peppers in shallow casserole.
  • Step #11 bake this until filling is cooked through and peppers are tender, about 50 mins.
  • Step #12 Serve as soon as possible.
  • Step #13 Serves 8.
