Ingredients
  • 8 sm Chicory heads; still in each bunch
  • 2 Lemons; zest of
  • Kosher salt
  • Freshly-ground black pepper
  • 1/2 c Virgin olive oil

Directions
  • Step #1 Bring 6 quarts water to boil & add 2 tbsps salt.
  • Step #2 Drop chicory into water & cook this until tender, about 4 to 5 mins.
  • Step #3 Remove and refresh in cold water bath.
  • Step #4 Drain well on towels.
  • Step #5 In a 12- to 14-inch saut? pan, heat olive oil until smoking.
  • Step #6 Fry chicory, still in bunches, until quite brown & crispy.
  • Step #7 Remove to paper towels & Spice up this with salt, pepper & lemonzest.
