Chickpea And Garlic Soup Recipe

Ingredients
  • 2 md Potatoes; peeled & sliced
  • 1 ts Oregano
  • 1/4 c Fresh cilantro leaves; finely sliced
  • 1 pn Cayenne pepper; or to taste
  • 19 oz Cooked chickpeas; with liquid
  • 1 c Small fava beans; rinsed
  • 1/4 c Olive oil
  • 3 md Onions; sliced
  • 4 Cloves garlic; crushed
  • 8 c Water
  • 28 oz Stewed tomatoes; canned
  • Salt & pepper; to taste

Directions
  • Step #1 A hot vegetarian country-style Arab soup.
  • Step #2 Bring the fava beans & water to a boil in a large pot.
  • Step #3 Cover and cook over med-heat/flame for an hr & a half, then add the potatoes & cook for a further 25 mins.
  • Step #4 In the meantime, heat the oil in a frying pan & saute the onions until they begin to brown.
  • Step #5 Add the garlic & coriander & stir fry for 3 mins.
  • Step #6 Add the contents of the frying pan with the remaining ingredients to the fava beans & bring to a boil.
  • Step #7 Simmer over a medium heat for 30 mins.
  • Step #8 Serve piping hot.
  • Step #9 THE FAVA BEANS should be the small Egyptian type about the size of a pea.
  • Step #10 They can be found in Middle Eastern stores in the large cities of North America.
  • Step #11 Navy beans may be substituted; in fact, though not traditional, they make an equally delicious soup.
