Chickpea And Pasta Soup Recipe

Ingredients
  • 1/2 lb Dried chickpeas; picked over,
  • 1/4 c White vinegar
  • For serving
  • Coarse salt
  • 3 tb Fruity extra-virgin olive oil
  • For serving;
  • 1/4 c Finely-sliced fresh oregano
  • 2 Italian Roma tomatoes; seeded & sliced,
  • 3/4 ts Salt
  • & soaked in water to cover overnight
  • 1 ts Freshly-ground black pepper
  • 1 c Water
  • 1 Head Red-leaf lettuce; inner leaves only, for serving
  • 1/4 c Crumbled feta cheese; ,
  • 3/4 lb Raw baby octopus
  • 3 tb Lemon juice
  • 1/4 c Finely-sliced fresh parsley
  • 2 c Fish stock or clam juice
  • 1 tb Black peppercorns
  • 6 Bay leaves
  • 1 1/2 qt Water

Directions
  • Step #1 If using raw octopus, remove & discard the eyes & beak & clean thoroughly.
  • Step #2 Sprinkle top all over with salt & knead well to tenderize.
  • Step #3 Rinse under cold running water.
  • Step #4 To make the poaching liquid, pour the fish stock or clam juice, water, & vinegar into a stockpot into which a medium strainer will fit.
  • Step #5 Add the black peppercorns & 5 bay leaves & bring to a boil.
  • Step #6 Place the cleaned octopus in the strainer & dip in the boiling liquid for 30 seconds.
  • Step #7 Remove & let rest for about 2 mins.
  • Step #8 Repeat this procedure twice.
  • Step #9 Transfer the blanched octopus to a tray & put in the fridge until cold.
  • Step #10 Strain the poaching liquid & reserve 1/4 c.
  • Step #11 When ready to use, cut the octopus into bite-sized pieces.
  • Step #12 Drain the soaked chick peas and, in a large pot, mix them with the water & the remaining bay leaf.
  • Step #13 Bring up to a boil, reduce the heat & let simmer covered for about 2 1/2 hrs, or until tender.
  • Step #14 Drain well & discard the bay leaf.
  • Step #15 (Or, if desired, use canned chick peas for this dish; rinse & drain them well before adding to the salad.
  • Step #16 ) In a bowl, chickpeas, black pepper, parsley, lemon juice, oregano, reserved octopus cooking liquid, salt, mix the octopus, & olive oil.
  • Step #17 Toss together until all the ingredients are well coated.
  • Step #18 Mound the salad onto a platter & place leaves of red-leaf lettuce upright all around the edges.
  • Step #19 If desired, Sprinkle top with crumbled feta & sliced tomatoes.
  • Step #20 Serve as soon as possible.
