Chickpea Kofta Recipe

Ingredients
  • 4 1/2 c Milk plus
  • 2 tb Milk
  • Freshly ground white pepper
  • Vegetable oil for frying
  • Salt; to taste
  • 4 tb Unsalted butter
  • 2 1/4 c Chickpea flour
  • Cayenne; to taste

Directions
  • Step #1 In a large, deep pot, heat 4 inches of oil until it reaches 350 degrees.
  • Step #2 Bring milk to a boil in a large saucepan with butter, cayenne, salt, & white pepper.
  • Step #3 Slowly add flour, whisking constantly and vigorously until the mixture begins to pull away from the sides of the pan, about 5 mins.
  • Step #4 Cover an 11- by 17-inch baking sheet with plastic wrap.
  • Step #5 Pour mixture onto three quarters of the prepared baking sheet, spreading evenly with an offset spatula.
  • Step #6 Cover with plastic wrap, & transfer to refrigerator to chill until firm, about 1 hr.
  • Step #7 Remove plastic wrap, & cut crosswise into 3-inch strips.
  • Step #8 Cut strips crosswise into 1/2-inch fries.
  • Step #9 Transfer fries to heated oil, & fry in batches until golden, about 2 mins.
  • Step #10 remove this from oil, & Spice up with salt & cayenne pepper.
  • Step #11 Repeat with remaining fries.
  • Step #12 Serve as soon as possible.
  • Step #13 Serves 8 to 10.
  • Step #14 Comments: These can also be pan-fried in 1/4 inch of olive oil.
