Chickpea Soup (tunisia) Recipe

Ingredients
  • 1/2 c Fresh cilantro leaves; finely sliced
  • 9 c Water
  • 1 c Chickpeas; soaked overnight in
  • 1 pn Cayenne pepper
  • 4 Cloves garlic; crushed
  • 2 md Onion; sliced
  • 2 tb Butter
  • 1/2 ts Mustard powder
  • Salt & pepper

Directions
  • Step #1 In a saucepan, bring chickpeas & their soaking water to a boil and then cook over med-heat/flame for 1+1/2 hrs.
  • Step #2 In a separate pan, stir-fry the onions & garlic in the butter until they begin to brown.
  • Step #3 Add the coriander leaves & stir-fry for a few moments longer, then add the contents of the frying pan & the remaining ingredients to the chickpeas.
  • Step #4 Cover & cook over medium heat for 1 hr or until the chickpeas are tender.
