Chickpeas In Eggplant Tahini Sauce Recipe

Ingredients
  • 3 tb Extra-Virgin Olive Oil
  • 3 Pita Bread Rounds; Cut Into 4 Wedges
  • 1 c Green Onions; Diagonally Sliced
  • 1 1/2 ts Grated Lemon Rind
  • 1/4 c Fresh Lemon Juice
  • 1 c Uncooked Bulgar
  • 15 oz Chickpeas; Canned, Drained
  • 1/8 ts Hot Sauce
  • 1 c Boiling Water
  • 1 c Plum Tomatoes; sliced
  • 1/2 c sliced Parsley
  • 1/2 ts Salt
  • 1 ds Pepper

Directions
  • Step #1 mix bulgur & water in a large bowl.
  • Step #2 Cover & let this stand 30 mins.
  • Step #3 Add the tomato & next 9 ingredients (tomato through chickpeas); stir well.
  • Step #4 Cover & chill.
  • Step #5 serve this with pita bread.
