Chickpeas With Raisins And Spinach Under Pressure Recipe

Ingredients
  • 1/4 c Peeled & sliced carrot
  • 1 c Vegetable broth
  • 2 tb Extra virgin olive oil
  • 2 Cloves garlic; minced
  • 1 tb Tomato paste
  • 1/8 ts Ground cloves
  • 3/4 c sliced white onion
  • 1 Bay leaf
  • 3/4 c Dry red wine
  • 1/2 ts Dried marjoram
  • 1 c Dried chickpeas; soaked overnight
  • 4 Whole cloves
  • 6 c Water
  • Salt & pepper to taste
  • 1/4 c sliced celery

Directions
  • Step #1 Drain & rise beans.
  • Step #2 In a large heavy bottomed pot, bay leaf, mix beans, water, marjoram, & cloves.
  • Step #3 Bring to a boil, then reduce heat to low & let simmer for about 2 hrs, until beans are tender, but not soft.
  • Step #4 preheat your trusty oven to 350 F.
  • Step #5 Drain beans & discard whole spices.
  • Step #6 Place beans in a 8-c capacity casserole dish.
  • Step #7 Heat olive oil n a medium skillet or saute pan over med-heat/flame.
  • Step #8 Add onions, carrot, celery, garlic, & ground cloves.
  • Step #9 Cook, until vegetables soften & brown slightly, stirring frequently, about 6 mins.
  • Step #10 Add vegetable broth, & tomato paste to the skillet, stir well, wine, & cook for an extra 3 mins.
  • Step #11 Pour vegetable mixture over beans in casserole.
  • Step #12 Cover loosely & bake for 45 to 60 mins until sauce has thickened.
  • Step #13 Serve warm or at about room temp.
