Ingredients
1 sm Can sliced green chiles
1 1/2 c Quick-cooking grits;
1 ts Red pepper
6 c Water
3 Eggs
1 ts Paprika
2 ts Salt
4 c Cheddar cheese
Directions
Step #1 Bring water to a boil.
Step #2 stir in the grits & salt.
Step #3 Return to a boil, cover, reduce heat & let simmer 10 mins or until thickened, stirring often.
Step #4 stir in the paprika & pepper.
Step #5 Beat eggs in a large bowl.
Step #6 slowly add about 1/4 of hot grits into eggs; add to remaining hot grits, stirring well.
Step #7 stir in the cheese & chiles.
Step #8 pour this into greased 11x7 inch baking dish.
Step #9 bake this at 325F degrees for 45 mins or until set.
Step #10 Yield: 8 servings.
