Chile Chickpeas Recipe

Ingredients
  • 1 sm Can sliced green chiles
  • 1 1/2 c Quick-cooking grits;
  • 1 ts Red pepper
  • 6 c Water
  • 3 Eggs
  • 1 ts Paprika
  • 2 ts Salt
  • 4 c Cheddar cheese

Directions
  • Step #1 Bring water to a boil.
  • Step #2 stir in the grits & salt.
  • Step #3 Return to a boil, cover, reduce heat & let simmer 10 mins or until thickened, stirring often.
  • Step #4 stir in the paprika & pepper.
  • Step #5 Beat eggs in a large bowl.
  • Step #6 slowly add about 1/4 of hot grits into eggs; add to remaining hot grits, stirring well.
  • Step #7 stir in the cheese & chiles.
  • Step #8 pour this into greased 11x7 inch baking dish.
  • Step #9 bake this at 325F degrees for 45 mins or until set.
  • Step #10 Yield: 8 servings.
