Chile With Melted Cheese Recipe

Ingredients
  • Salt; To Taste
  • 2 Cloves Garlic; Minced
  • 2 c Beef Broth
  • 2 lb Boneless Beef; 1 inch Cubes
  • 1 c Roasted Green Chiles; sliced
  • 1 tb Shortening
  • 1/8 ts Ground Red Chiles
  • 1 ts Cumin; Ground
  • 48 oz Canned Tomatoes

Directions
  • Step #1 Melt shortening in large pot with lid.
  • Step #2 Add meat slowly & brown.
  • Step #3 Add garlic during last 5 min of browning & cook this until soft.
  • Step #4 Add liquid from tomatoes.
  • Step #5 Chop & add tomatoes.
  • Step #6 stir in the remaining ingredients except salt & bring to boil.
  • Step #7 Cover, reduce heat and simmer about 2 hrs, stirring every once in awhile.
  • Step #8 When meat is very tender, taste & add salt.
  • Step #9 If too thin, remove lid & let simmer another 30 mins.
