Ingredients
  • 1/4 ts Salt
  • 3 7 oz cans whole green chilies; split open
  • 2 tb All purpose flour
  • 4 Eggs
  • 4 c Shredded Monterey Jack;
  • 1 1/2 c Milk
  • 1/2 ts Pepper
  • 4 c Shredded cheddar;

Directions
  • Step #1 Lightly grease 9x13-inch glass baking dish.
  • Step #2 Beat first 5 ingredients in medium bowl to mix.
  • Step #3 Arrange chilies from 1 can in prepared dish, covering bottom completely.
  • Step #4 Sprinkle top with 1/3 of each cheese.
  • Step #5 Repeat layering twice.
  • Step #6 Pour egg mixture over cheese.
  • Step #7 let this stand 30 mins.
  • Step #8 (Can be prepared 1 day ahead.
  • Step #9 Cover & put in the fridge.
  • Step #10 ) preheat your trusty oven to 350F.
  • Step #11 bake this until casserole is slightly puffed in center & golden brown on edges, about 45 mins.
  • Step #12 Cool 20 mins & serve.
