Chili's Steak Marinade And Fajitas Recipe

Ingredients
  • 8 c Water; divided
  • 1 c Crushed tomatoes
  • 1 ts Minced garlic
  • 1 1/2 c sliced onion
  • 1 c Masa harina
  • 1 ts Ground cumin
  • 2 ts Chili powder; see note
  • 2 tb Vegetable oil; see note
  • 4 oz sliced green chiles; Betsy's addition
  • 1/4 ts Cayenne pepper
  • 1 1/2 lb Boned & skinned chicken breast halves; cooked and cubed
  • 4 oz Velveeta Light?; cut in small cube
  • 2 tb Chicken base

Directions
  • Step #1 Original called for 1/2 c oil.
  • Step #2 Original called for 1 tsp chili powder In large pot, chicken base, onion, place oil, chiles, & spices.
  • Step #3 Saute until onions are soft & clear, about 5 mins.
  • Step #4 In another container, mix masa harina with 2 c water.
  • Step #5 Stir until all lumps dissolve.
  • Step #6 Add to sauteed onions, bring to boil.
  • Step #7 Once mixture starts to bubble, continue cooking 2-3 mins, stirring constantly.
  • Step #8 This will eliminate any raw taste from masa harina.
  • Step #9 add in the remaining 6 c water to pot.
  • Step #10 Add tomatoes; let mixture return to boil stirring every once in awhile.
  • Step #11 Add cheese to soup.
  • Step #12 Cook stirring every once in awhile, until cheese melts.
  • Step #13 Add chicken; heat through.
  • Step #14 Per serving: 244 Calories; 8g Fat (28% calories from fat); 24g Protein; 19g Carbohydrate; 56mg Cholesterol; 1012mg Sodium NOTES : 5 WW points.
