Chilled Avocado And Rocket Soup With Tomato Salsa Recipe

Ingredients
  • 600 ml Light chicken or vegetable stock;
  • 4 Stems of flat leaf parsley;
  • 150 ml Double cream;
  • 2 Cloves garlic; mashed with a little salt
  • 1 Lime; juice of
  • 3 Ripe avocados
  • 1 Handful freshly sliced chives

Directions
  • Step #1 Peel & stone the avocados.
  • Step #2 mix in a liquidiser or processor with the parsley, garlic, lime & half the stock until smooth.
  • Step #3 Pass through a fine sieve.
  • Step #4 Add the rest of the stock & cream.
  • Step #5 Spice up to taste.
  • Step #6 Chill for at least 2 hrs before serving topped with a swirl of cream & a scattering of chives.
