Chilled Avocado Soup With Tomato Salsa Recipe

Ingredients
  • 2 tb Brunoise yellow peppers
  • Cayenne pepper; to taste
  • For cartilage
  • Tabasco sauce
  • Juice of one lemon
  • 1 c Chicken stock or milk
  • 2 tb Finely-sliced parsley
  • 4 Ripe avocados; peeled, seeded,
  • 2 c Sour cream
  • Worcestershire sauce
  • 1/2 lb Crab meat; picked over
  • Salt; to taste
  • 2 c Half-and-half
  • 2 ts sliced garlic
  • 1/2 c sliced green onions
  • 2 tb Minced shallots
  • 1 tb Olive oil
  • 2 tb Brunoise red onions
  • 2 tb Brunoise red peppers
  • & sliced

Directions
  • Step #1 In a food processor/blender, sour cream, green onions, shallots, 1 tsp garlic, half & half, puree the avocados, chicken stock & lemon juice.
  • Step #2 Puree until smooth.
  • Step #3 Spice up the soup with Tabasco, Worcestershire sauce, salt & cayenne.
  • Step #4 Turn the soup into a glass bowl & chill completely.
  • Step #5 In a saute pan, heat the olive oil.
  • Step #6 When the oil is hot, add the peppers & onions.
  • Step #7 Spice up this with salt and cayenne.
  • Step #8 Saute for 30 seconds.
  • Step #9 Add the remaining garlic & saute for 30 seconds.
  • Step #10 remove this from the heat & cool completely.
  • Step #11 Turn the vegetables into a mixing bowl.
  • Step #12 Add the crab meat & parsley.
  • Step #13 Spice up with salt & pepper.
  • Step #14 Ladle the soup into the serving bowls and garnish the soup with the crab relish.
  • Step #15 This recipe yields 6 servings.
