Step #1 In a saucepan cook the onion in the oil over moderately low heat, stirring, until it is softened.
Step #2 Add the carrots, the curry powder, & the chutney & cook the mixture, stirring, for 1 min.
Step #3 Add the broth, covered for 15 mins, the water, & salt & pepper to taste & let simmer the mixture, or until the carrots are very tender.
Step #4 In a mixer puree the mixture in batches with the ice cubes, & salt to taste for 1 min, or until it is smooth, the lemon juice, transferring the soup as it is pureed to a metal bowl set in a larger bowl of ice & cold water.
Step #5 Chill the soup, divide it between 2 chilled bowls, or until it is cold, for 10 mins, stirring every once in awhile, & Sprinkle top it with the coriander & the peanuts.
Step #6 Makes about 3 c, serving 2.
