Chilled Pinwheel Sandwiches Recipe

Ingredients
  • 1 tb Asian chile sauce
  • 1 md Onion; sliced
  • 1 tb sliced gingerroot
  • 2 ts Vegetable oil
  • 1 tb Curry powder
  • 1/4 c Spice uped rice vinegar
  • 5 lb Mussels; scrubbed and debearded
  • 1/2 c Apple juice
  • 2 Pears; peeled, cored, and sliced
  • 3 Cloves garlic; sliced

Directions
  • Step #1 Heat oil in a large saute pan.
  • Step #2 Add garlic, & onion, and saute until you can smell the aroma, gingerroot, 1 or 2 mins.
  • Step #3 Add curry powder & saute 1 min.
  • Step #4 Add sliced pear & apple juice & cook this until the pear is tender.
  • Step #5 Add vinegar & chile sauce.
  • Step #6 Let cool.
  • Step #7 In a second large saute pan, over high heat until they open, covered, cook mussels, 3 to 5 mins.
  • Step #8 Discard any that do not open.
  • Step #9 Remove mussels from pan, place this in a large bowl, & top this with cool curry sauce.
  • Step #10 Chill for about 30 mins before serving.
  • Step #11 You may also serve these mussels hot.
  • Step #12 Serves six.
