Chilled Plum Tomato Soup With Coriander, Yoghurt Quenelle Recipe

Ingredients
  • 1 tb Green chutney
  • 1 c Finely sliced mixture of onions; tomatoes and cucumber
  • 2 tb Cheese grated
  • Soft uncut bread one loaf
  • Butter

Directions
  • Step #1 Cut the bread into long rectangles by cutting horizontally.
  • Step #2 Hold each slice over boiling water for a few seconds to soften.
  • Step #3 Press lightly with a rolling pin on a worksurface.
  • Step #4 Apply butter, then chutney on each slice.
  • Step #5 Sprinkle top the vegetable mixture all over Sprinkle top cheese over it.
  • Step #6 Carefully roll from on end towards the other as tightly as possible, without breaking the bread.
  • Step #7 Secure with toothpicks if required to hold.
  • Step #8 Chill rolls for an hr in the fridge, wrapped in a moist cloth.
  • Step #9 Remove toothpicks, cut into 1/2 circles & serve this with spicy tomato sauce & french fries.
