Chilled Strawberry Souffle With A Strawberry Coulis Sauce Recipe

Ingredients
  • 4 oz American sturgeon black caviar
  • 1 c Nonfat yogurt
  • Removed; & sliced
  • Salt; to taste
  • 1 Onion; roughly sliced
  • Freshly-ground black pepper; to taste
  • 2 Celery stalks; sliced
  • 2 c Chicken broth
  • 1 lg Cucumber; peeled, seeds
  • 2 c Loosely-packed sorrel leaves
  • 2 tb Whole butter

Directions
  • Step #1 In a casserole over med-heat/flame, melt butter.
  • Step #2 Add onion, cucumber, salt, celery, & pepper & sweat until translucent.
  • Step #3 Add stock and bring to the boil.
  • Step #4 Reduce to a simmer & cook for 45 mins.
  • Step #5 Add sorrel & cook for an extra 5 to 6 mins.
  • Step #6 mix mixture with an immersion mixer until smooth & allow this to cool before refrigerating.
  • Step #7 Chill for 2 hrs.
  • Step #8 mix in yogurt & Spice up this with salt & pepper.
  • Step #9 Serve each bowl with a generous dollop of caviar.
  • Step #10 This recipe yields 4 servings.
