Chilled Tomato And Basil Soup Recipe

Ingredients
  • 1 tb Sugar
  • 1/4 c sliced fresh cilantro
  • 2 tb Olive oil
  • 1 1/2 ts Dried oregano
  • 1 c Low-fat plain yogurt
  • Tabasco or other hot pepper sauce
  • 1 tb Seeded & sliced jalapeno chile
  • Kosher salt
  • 1 1/2 c sliced yellow onions
  • 2 lb Husked & quartered tomatillos
  • 1 tb Fresh lime juice
  • 1/2 ts Ground cumin
  • 2 tb Minced garlic
  • 1/4 c Tequila
  • 4 c Rich chicken stock

Directions

  • Step #3 In a large saucepan, heat olive oil & saute onions until soft and lightly browned.
  • Step #4 Add jalapeno, tomatillos, garlic, cumin & oregano.
  • Step #5 Saute 5 mins more.

  • Step #7 Add stock, bring to a boil, then lower heat & let simmer uncovered 10 mins.
  • Step #8 Transfer to a mixer or food processor/blender & puree, in batches if necessary.
  • Step #9 put in the fridge until well chilled.

  • Step #11 At serving time, lime juice, salt & Tabasco to taste, stir in the tequila, cilantro, sugar & yogurt.
  • Step #12 Serves 8 as a starter course.
